Pekorelo is a hard full-fat cow cheese of characteristic piquant taste.
It ages for at least two months in its rind protected by a shiny
brown coating. Its body is compact and elastic, with a larger
number of evenly distributed holes in the profile. A distinctive
and characteristic flavour of Pekorelo becomes manifest in mature
cheeses.
This supreme cheese is best when combined with red wine.
