Madrigal – the unique one among cheeses

Madrigal is a full-fat semi-hard cow cheese originating from the Loire valley in central France.

It is produced in large wheels of 5 or 12 kg and has the shape of flattened ball. Its characteristic sweet taste is nutty. The rind has a strong amber colour and the interior is straw-like, with large holes (eyes). It is easy to cut into slices or dices and it melts well. Fruit red and white wines are recommended with Madrigal.
