Emmental is a yellow semi-hard, produced from cow's milk, with characteristic holes, extremely sweet almond-like taste. The cheese originated in the river Emme Valley of Switzerland, close to the French border.
Président Emmental is composed of selected sections from the
mid-wheel - the very "heart" of cheese, because that part has the
best aroma and a specific fruity taste. Président Emmental is
nutritionally a highly valuable commodity since 100 g of cheese
contains about 800 mg of calcium, which provides 100% of
recommended daily requirements.
With Président Emmental you can combine light fruity red and
white wines, such as Žlahtina, Chardonnay, Grey Pinot, Sauvignon,
Portuguiser or Beaujolais.
Emmental is available in 250 g and 2.6 kg packages.
How does Emmental get its holes?
The characteristic holes appear in the final stages of cheese
production as a product of the metabolism of microorganisms
involved in the process of cheese ripening. The size, shape and
number of holes depend on the environmental conditions in which the
cheese matures. Only experienced cheese producers can synchronize
the ripening conditions to make the holes evenly distributed. It is
a well known saying of Swiss cheese producers "everyone knows how
to make holes in cheese, but only the Swiss know how to make cheese
with holes."
