The most esteemed French cheese among Frenchmen is Comté, a cheese that is strongly connected to the region of its origin.
Président Comté is a hard pressed cheese made from unpasteurized
cow's milk, traditionally produced in the mountains of Jura in the
Franche-Comté region, where it originated as far back as the 13th
century. This cheese, bearing the controlled-origin label (AOC), is
matured for 6 months in caves to give it its characteristic smooth,
golden paste and a texture that melts in the mouth.
It is an excellent choice for the preparation of cheese boards,
salads, unusual and gourmet sandwiches (such as the
Croque-Monsieurs) and a perfect addition to fine wines.
